Shrimp Chowder

Ingredients:



  • 1 pound Contessa (any-size) Cooked Tail-off Shrimp




  • 1/2 cup flour




  • 1/2 cup red pepper, seeded and finely diced




  • 2 cups redskin potatoes




  • 2 garlic cloves




  • 1/2 cup celery, sliced




  • 1/2 cup chives, finely chopped




  • 5 cups heavy cream




  • 1/2 cup butter, salted




  • 1 cup sweet onion (Maui, Walla Wall, Vidalia), finely diced




  • 2 cups kernel corn (frozen or canned niblets)




  • 6 slices cooked bacon, minced




Steps:



  • In a saucepan, melt butter and add red pepper, celery, garlic and onion and cook over low heat for 5-7 minutes.




  • Stir in flour and cream to saucepan and slightly increase heat to cook until the sauce thickens.




  • Add corn, potatoes and bacon and lower heat.




  • Add shrimp and salt and pepper to taste.




  • Garnish with chopped chives.
