1 pound Contessa (any-size) Cooked Tail-off Shrimp
1/2 cup flour
1/2 cup red pepper, seeded and finely diced
2 cups redskin potatoes
2 garlic cloves
1/2 cup celery, sliced
1/2 cup chives, finely chopped
5 cups heavy cream
1/2 cup butter, salted
1 cup sweet onion (Maui, Walla Wall, Vidalia), finely diced
2 cups kernel corn (frozen or canned niblets)
6 slices cooked bacon, minced
In a saucepan, melt butter and add red pepper, celery, garlic and onion and cook over low heat for 5-7 minutes.
Stir in flour and cream to saucepan and slightly increase heat to cook until the sauce thickens.
Add corn, potatoes and bacon and lower heat.
Add shrimp and salt and pepper to taste.
Garnish with chopped chives.
