Recipe Contest Winner – Stephanie Matthews
3-4 Servings
24 ounces Contessa large Cooked Tail-off Shrimp
1 pound box of orzo pasta
1/2 cup of green onions, sliced
1/2 cup of red bell pepper, minced
1 cup of sliced bamboo shoots
2 cups of snow peas
1 cup of hoisin sauce
1/4 cup of soy sauce
2 tablespoons of sesame seed oil
1 tablespoon of hot chili sauce
1/2 cup of rice vinegar
2 tablespoons of honey
1/3 cup of toasted sesame seeds
Bring a large pot of lightly salted water to a boil.
Add the snow peas and cook for 1 minute. Scoop out the peas and rinse with cold water.
Add orzo and cook for 8 to 10 minutes or until al dente. Drain and rinse with cold water.
In a large bowl add the cold orzo, shrimp, peas, onions, bamboo shoots and red pepper.
In a small bowl whisk together the hoisin sauce, soy sauce, sesame oil, chili sauce, vinegar and honey.
Pour over salad and toss until well coated. Refrigerate for 1 hour to allow flavors to marry.
