1 package Contessa Orange Chicken
3 tablespoon vegetable oil
3 eggs
Heat 1 tbsp. vegetable oil in a large non-stick skillet over high heat.
In a small bowl whip eggs, add salt and pepper to taste and pour in skillet.
Scramble eggs for about 30 seconds, remove from skillet and set aside.
Heat 2 tbsp. vegetable oil in same skillet over medium heat.
Add frozen chicken and stir-fry for 5 minutes.
Add frozen vegetables and stir-fry for 4 minutes.
Add frozen rice and thawed sauce. Stir-fry for 1 to 2 minutes.
Stir in eggs and serve.
