Egg Drop Soup With Chicken

Ingredients:



  • 1 package Contessa Chicken Chow Mein




  • 1 tablespoon cooking oil




  • 14 ounce can chicken broth




  • 2 1/4 cups water




  • 5 scallions, chopped into 1-inch pieces




  • 2 tablespoons cornstarch




  • 1 egg, slightly beaten




Steps:



  • Heat oil in a large soup pot over high heat.




  • Add chicken and vegetables. Stir-fry for 1 to 2 minutes.




  • Add chicken broth, 2 cups water, sauce from packet, and scallions. Bring to a boil.




  • Dissolve cornstarch into remaining 1⁄4 cup water.




  • Add to pot and stir until soup thickens.




  • Slowly pour in egg, stirring once.




  • Add noodles and season with salt and pepper to taste. Serve immediately.
